Tasting Memory: A Live Exploration of Food, Emotion, and Nostalgia at Gastronord

In collaboration with Mari Ubiali, CEO of Thimus, we travelled to Stockholm, Sweden, to lead an immersive journey into the emotional dimensions of food design. We showcased our pioneering methodology, where neuroscience meets memory and product development meets emotion.
At the heart of our presentation and hands-on workshop was one powerful question:
Can food evoke nostalgia on purpose, and can we design for it?
Through a blend of talk and tasting, we unpacked how food nostalgia, the deep emotional pull of childhood flavours, cultural markers, and sensory memory, can be used as a scientific tool for creating emotionally resonant products. Participants experienced firsthand how our methodology captures emotional data and translates it into products that connect, comfort, and spark memory.
More than a showcase, this was a live experiment demonstrating how food, memory, and technology can come together to shape the future of emotional product design.
