In a rare cross-cultural collaboration, I was invited by the local government of Fujian, China, the cradle of Chinese tea culture, to immerse myself in the ancestral world of tea and explore how tradition can meet innovation on a global stage.
After a deep on-the-ground experience with local tea masters and producers, I returned to my lab inspired and transformed centuries-old wisdom into something radically new:
A line of high-end kombuchas crafted from premium Chinese teas, designed not only for flavour and complexity, but for functionality and wellness.
These kombuchas are not just drinks; they’re fermented elixirs. Through precise fermentation, they unlock the “food as medicine” power of tea and bring depth, nuance, and vitality to the non-alcoholic pairing world. Formulated through advanced process development techniques, they now serve as bespoke drink pairings in top-tier restaurants, elevating the dining experience without a single drop of alcohol.
