Mimic SeaFood - Alt Protein development

In partnership with Copenhagen-based Mimic Seafood, creators of the groundbreaking tomato-based TUNATO(R), a plant-based prototype designed to replicate the texture and depth of tuna, I led the development of fine dining applications that showcased its full culinary potential. The project culminated in an exclusive gastronomic experience at Faula, the signature restaurant of the five-star luxury hotel Casa di Langa in Piemonte. Paired with exceptional wines from Enrico Serafino Winery, the event was a celebration of innovation, sustainability, and the future of conscious luxury on the plate.
