MS Donna is a Norwegian company specialising in every stage of the King Crab value chain: from sustainable fishing to industrial processing and global commercialisation. While prized for its flavour, King Crab also presents significant challenges, particularly in terms of marine waste. To tackle this, I partnered with MS Donna to dive deep into the King Crab industry, exploring its natural habitat, understanding its ecosystem impact, and developing innovative culinary applications that maximise the value of the whole animal. This collaboration blends gastronomy, sustainability, and science to unlock new potential for one of the ocean’s most iconic species.
